How to Grill Polish Kielbasa
Good kielbasa does not need much work on the grill. It is already smoked and fully cooked, so the goal is simple: warm it through slowly, then give the casing a light char.

What Makes Polish Kielbasa Different?
Polish kielbasa is usually more heavily seasoned and smoked than the average sausage. You should expect a fuller meat flavour, garlic and spice in the background, a natural casing and a satisfying bite.
The casing is important. Grill it gently and it will become crisp and lightly browned without splitting.
The Best Way to Grill Kielbasa
1. Use medium heat first
Do not put cold sausage straight over the hottest part of the grill. Start it over medium or indirect heat and turn it every few minutes. This warms it through without burning the casing.
2. Finish over direct heat
Once hot, move the kielbasa over direct heat for a short finish. Turn it until the outside is browned and lightly charred. Usually, a few minutes is enough.
3. Do not pierce or cut the sausage before grilling
Leave the casing intact. Piercing or deeply scoring the sausage lets the juices and fat escape, which can make it dry out faster.
4. Let it rest briefly
Take the kielbasa off the grill and leave it for two minutes before cutting or serving. It will stay juicier and slice more cleanly.
How to Serve Grilled Kielbasa
The classic pairing is simple: good mustard, dark bread and pickled cucumbers. Sauerkraut with onions also works very well, especially if you are serving kielbasa as a proper meal rather than a quick snack.
For a barbecue table, serve it whole in a bun, sliced for sharing, or alongside other grilled meats and vegetables.
